The Bio Hombre production cycle: a perfect balance
We were the first producer to believe in an environmentally sustainable organic farm made up of land, animals, and Parmigiano Reggiano. This process is an honest and transparent utilization of resources, including our personnel.
Hombre is a single farm covering more than 300 hectares of land of exceptional agronomic quality. There are typically about 250 cows in milking, each with at least 1 hectare of land available to them. Our cattle are selected to obtain a high content of casein for processing rich milk into Parmigiano Reggiano.
The generous quantity of land means that cattle are fed exclusively with forage grown directly on the farm property. The herd is sheltered in environments compliant with the most rigorous of ethical and animal well-being standards with open stalls, individual beds, and open pasture.
Milk is sent to the dairy directly from the adjacent milking room for processing according to the strict regulations of the Parmigiano Reggiano Consortium. All the cheese produced is aged at the farm, adhering to this unique closed production process.
We wanted to put down on paper how and where this wonderful product is made, and this is why we obtained DNV certification, as a guarantee of meeting the most rigorous demands for our organic Parmigiano-Reggiano cheese. This recognition is obtained on completion of the inspections established for conformity of activities with the requirements of the standard Uni En 22005:2008 on traceability of our agricultural and food production chain.
