Milk is sent to the dairy directly from the adjacent milking room for processing according to the strict regulations of the Parmigiano Reggiano Consortium. All the cheese produced is aged at the farm, adhering to this unique closed production process.

This recognition is obtained on completion of the inspections established for conformity of activities with the requirements of the standard Uni En 22005:2008 on traceability of our agricultural and food production chain.
